In 1975, Favre and Anna Maria went on a vacation to Italy where they tasted dozens of espressos, aiming to discover espresso’s essence. It would be in Caffè Sant’Eustachio, which nowadays is considered to serve the best espresso in Rome, that Favre understood how air enhances the wealth of coffee aromas.
Watching the barista, Eugenio, Favre realized that he was quintessentially allowing the entry of small pockets of air into the coffee maker while pumping the piston.
Following this enriching experience, Favre discovered the formula:

COFFEE
At that time, Favre was working in the Packaging Department of Nestlé and officially started the monodose concept in 1976.
However, witnessing the lack of the company’s openness to innovation, he wrote a letter to his CEO, explaining the business opportunity they had in their hands.
It took 10 years for the proposal to be accepted. Nespresso was founded as late as 1986 as an independent company of the group, with Eric Favre as its CEO.
The first capsules and machines of the delectable Nespresso coffee were already in the market but several disagreements with the Nestlé’s Board forced Favre to abandon Nespresso in 1989.
The problem is that, when you’ve understood everything and you know what your idea can become, nobody really understands what you’re talking about because it’s something new ant there’s no language to describe it.
In 1990, Favre started to envision his dream of starting his own company. In 1991, he founded Monodor where he continued to develop all the work he initiated at Nestlé.
Favre has always dedicated his best efforts to R&D which allowed him to invent a new generation of capsules entirely made of polypropylene, along with many other technical and aesthetic improvements.
Besides Nespresso, Monodor was the only other company to provide capsules from a closed system the world over.
Today, the majority of the traded coffee monodose systems have their roots in Nespresso’s and Monodor’s methodologies and patents.
Over 500 million pods were sold as early as 2010 when Favre restructured Monodor into Mocoffee with the intention of embracing new markets and professionalising the family business.
Favre could count on Pascal Schlittler’s leadership, a Swiss experience manager. Together they kept investing in cutting-edge technology to develop the best coffee monodose systems possible, while providing market retailers and leading roasters licences of their own closed system.
The company with a focus on its traditional business model was growing year after year.
CEO of the company since 2016 and the Mocoffee team planned the vision for the future and, in 2017, set out their vision for ambitious growth, Flores believed in the need for a transformation of the business model. He increased its production capacity as well as its product lines and markets with direct presence. He also assumed an unprecedented commitment to sustainability and innovation.

In 2020 and 2021, the world and humanity had to overcome one of their biggest challenges which impacted and will be impacting our lives forever.
